While our main focus here at BAOS is craft breweries, chatting with the folks who take care of the ingredients is just as important. Colin Byrne of Le Labo, a yeast company based in Quebec, joined Cee and Nate to chat about all things yeast, the lineup of beers all used Le Labo yeast so it was great to compare and taste different beers side by side that use the same yeast, they touched on the differences between dry and liquid yeast, how house yeast comes about, how yeast is propagated and reused, the differences between yeast companies, and talked about his work with a new contract brewery in Montreal, Passenger. They crushed some killer beers with Le Labo yeast, including Passenger The Sea To Sky West Coast IPA, Siboire Discipline Non-Alcoholic IPA, Passenger Malinovka Czech Pils, Overflow Cross Walk Dry-Hopped Pale Ale, Breton Irish Stout, Kichesippi Sasquatch Schnitzel Vienna-style Lager, and Passenger The Fire Pine Porter.
